Lowfat Banana Bread

2      cups all purpose or bread flour
¼     cup wheat germ
1      tsp. baking soda
1 ½ cups masked ripe bananas
1      cup skim milk
1      egg, beaten
¼     cup honey
1      tsp. vanilla extract
Vegetable cooking spray
Nuts, optional (high fat)

Combine flour, wheat germ, baking soda in a large bowl; make a well in center of mixture.  Combine banana, skim milk, honey, egg and vanilla’ add to dry ingredients, stirring just until moistened.  Coat 9x5x3 inch loaf pan with cooking spray.  Spoon batter into pan, and bake at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean.  Yield: 1 loaf (about 118 calories per ½ inch slice without nuts).
