Spiced Chili Sauce

Chilies, lime juice and mint enhance the flavor of our Thai Summer Rolls.

1/4 cup finely diced scallions (white part only)
1 ripe plum tomato, seeded and cut into 1/8-inch dice
1 teaspoon minced red or green jalapeño chili, seeds removed according to desired hotness
1/2 cup fresh lime juice (about 4 limes)
1/4 cup rice vinegar
1 teaspoon sugar
Salt and pepper, to taste
1 tablespoon chopped fresh mint leaves

Combine all of the ingredients in a small bowl and serve within 2 to 3 hours. (For the freshest taste, serve this sauce within 1 hour.)

Makes 1 cup. Per tablespoon: 5 calories, 1g carbohydrate, no protein, no fat, no cholesterol.
